Agusti Torello Mata has a reputation as one of Spain’s foremost Cava producers. The stated goal is “to make Cava with soul” working with only the traditional grapes. All of the fruit utilized is at least 30 years of age. Approximately 20% of the production is exported to a total of 31 countries.

Agustí Torelló Mata’s cava winery is in Sant Sadurní d’Anoia, the capital of cava and the heart of the Penedès region. Located in the central coastal area of Catalonia, this region lies very close to the Mediterranean Sea.

A Man, A Family

Agusti Torelló Mata was born into a dynasty of tailors and musicians, but went into the world of cava at a very young age, a world that turned into his profession and his passion. Pioneering, passionate and tireless, he created in 1953 the first wine analysis laboratory in the industry, managed important wineries in the Penedès region and set up his own cava winery in 1959. Due to his enthusiasm and vision of the viticulture industry, he soon became a reference point in the internationalization of cava. It is in this spirit that he fostered the creation of the Cava Guild, which acknowledged his work by appointing him President of Honour some years ago.

Agustí Torelló Mata’s cava is the result of a personal commitment. The commitment of a family and a team who make possible, year after year and harvest after harvest, the miracle of creating internationally renowned cavas with a unique personality. Born from the best Penedès vines, Agustí Torelló Mata’s cavas respect their land, local varieties, soil, climate, process and traditions. The most famous of their cava’s being “Kripta,” which they present in a handmade amphora shaped bottle. These cavas develop through excellence. They convey their spirit. They are cavas with soul.

Origin/Land

Agustí Torelló Mata’s cava winery is in Sant Sadurní d’Anoia, the capital of cava and the heart of the Penedès region. Located in the central coastal area of Catalonia, this region lies very close to the Mediterranean Sea.

The Mediterranean and the region’s large geological structures determine the geographic and microclimatic borders of the various subzones that make up the Penedès region. Mountain ranges: the Litoral and Prelitoral ranges, the Bonastre depression and the Montserrat massif provide, in conjunction with the orographic depressions of Penedès, Canyelles and Foix, a wide variety of soil and lithologic differences which, combined with their own microclimate, produce at least three distinctive viticultural areas.

This extraordinary diversity enables the production of very specific products. In other words, the unique identity of el Penedès is made up of small subregions or subzones. At Agustí Torelló Mata we evaluate and select the best land in each subregion in order to obtain the maximum expression, quality and personality from the local varieties.

Agusti Torello Mata is very loyal to the local varieties: Macabeu, Xarel·lo and Parellada, with which they blend their cavas.

Aged Cavas

Fine bubbles slowly develop in the bottles placed in deep cellars, where they are shielded from light and enjoy low temperatures at a constant humidity. Only the best of conditions combined with a long and patient ageing process make possible the miracle of transforming grapes into this complex and unique cava.
We only produce Reserva and Gran Reserva vintage cavas because it’s the long ageing that creates the complex bouquet and fine bubbles of our cavas. Finally, during the rinsing process (automatic or manual) we collect the sediments from the neck of the bottle.

After years of raising the beheading is the final moment, the dregs are collected from the neck of the bottle.
Every bottle is opened to extract the dregs during disgorgement. This is the moment when Agustí Torelló Mata’s cavas are born.
The disgorgement date is printed on the label to guarantee that our cavas are always consumed in the best conditions.

Each bottle is a personal commitment
Our cavas are the expression of a grape, a territory and a vintage. That’s why all our bottles bear the vintage and disgorgement date on the label.
