Serving wine is definitely a matter of temperature and context. Serving wine is also a matter of glass. Just like the tea ceremony, the wine degustation requests appropriate tools. If the traditional wine degustation has lost a certain sound of credit in our modern societies, it is still essential to use appropriate glasses to help wine give its best. Many people simply like to pour their wine and drink it; but they will still notice the difference when the right wine glass is used. However, connoisseur believe if you handle a wine with respect, it will reward you with a difference you can smell, taste and feel. Especially when a wine is allowed to develop its full character by using the right decanter and glass. Thus the shape of the glass, the size of the glass and the material with which the glass is made are crucial.

Pouring wine has also its must. Depending on the bowl size, fill the glass to between a quarter and a third full. Sparkling wine and Champagne glasses should be filled half. Another tip is to serve the wine just slighly cooler than its ideal temperature, as it will warm up in the glass.

As white wines are served cold, a smaller bowl reduces the amount poured, to help ensure the wine stays cold .
Red wine glass
Red wine benefits greatly if it is allowed space to develop. Therefore, larger bowls help the wine to interact with the air and fully develop the bouquet.

For taste, Champagne and sparkling wines are best served in slim flutes which help to keep it cool and sparkling. Wider glasses will warm the wine and exhaust its sparkle prematurely. Glasses with an effervescent point, help to focus the sparkle into an attractive spiral, and prolong the fizz. Champagne glasses are usually wider than those for sparkling wines, to assist champagnes more complex aromas and flavor.
Choosing glasses for your wine
A wine glass must be convex with the shape of a closed tulip to keep flavor inside the glass and prevent wine from too much air contact.
A wine glass must be tall enough to be hold in hand by its stem because the contact of the hand on the glass could warm the wine. It must be deep enough to make the wine swirl inside the glass so that you liberate aromas easier. The exception is Champagne flute which requires a tall, thin glass to see bubbles coming in range and assess the quality of the drink.
A wine glass must be made of a clear, polish, smooth material to appreciate the color and the texture of the wine.
