CALVADOSCalvados is an apple brandy that must be produced and come from Normandy, France. Like most French wines, Calados is governed by appellation controlee regulations and currently there are only three appellations in Normandy where calvados can be made; Calvados, Manche and Orne. Calvados is made and distilled using an alembic pot still, and from specially grown and selected apples, of which there are over 200 named varieties, that tend to range from sweet to tart. The fruit is usually picked by hand, pressed and made into a dry cider and finally distilled into a eau de vie.
