Spanish CavaThese are sparkling wines made in the traditional Champagne method. The word originates from Catalonia - where it means cellar. The Cava production (unlike Champagne) is not limited to a single area. The wine, to conform to DO must spend at least 9 months on its lees before disgorgement, with 4 atmospheres of pressure and attain 10.8 to 12.8% alcohol by volume; yields are however higher than in Champagne.  |
