Tawny Port

The wines from the Douro, unlike the wines from the northern coast undergo a rapid extraction of color and tannins. Fermentation is arrested by the addition of a fortifying spirit after 2 or 3 days. Although port style wines exists in South Africa, California and Australia, genuine port is from Portugals Douro DOC. Basically 2 broad categories of port exist - those by cask ageing or those by bottle ageing.
